Elaine’s Chili 3 lb. ground chuck or ground turkey 2 tablespoons olive oil 1 small onion, diced 2 packages McCormick Mild Chili Seasoning 1 28 oz. can of crushed tomatoes 1 14.5 oz. can petite cut diced tomatoes 1 6 oz. can tomato paste 1 15 oz. can kidney beans 1 15 oz. can Pinto beans 1 15 oz. can of speckled beans ½ teaspoon salt ½ green pepper, diced ½ yellow pepper, diced ½ red pepper, diced 1/3 cup brown sugar ¾ cup water In large pot, lightly brown meat in 2 tablespoons olive oil; add diced onion and diced peppers, and fry until onions turn translucent. Add the McCormick seasoning packets, stir well to coat meat and fry on low an extra minute or two. Add tomato paste, rinsing out can with ¾ cup water and add to pot. Add crushed tomatoes, diced tomatoes, and bring to a simmer. Add the 3 cans of beans. (If you want a thicker chili, drain liquid off the beans; if you want a “soupier” chili, leave liquid on the beans when adding). Add the brown sugar last, and simmer gently, stirring often for about an hour, if possible. Serve with sour cream, if desired, and cheese, homemade bread, Perfect Biscuits, or Cornbread found in this recipe book. Note: Chili tastes even better on the second or third day as flavors “marry.” Chili Potatoes: Use leftover chili to make what I call “Chili Potatoes” for another meal. Make baked potatoes, (or use hot jacket potatoes), split them and spoon hot chili into potatoes on individual plates; top with cheddar cheese and sour cream. Serve this gourmet feast with 7-layer salad, Cole Slaw, or a spinach salad and bread sticks found in this recipe collection. It’s yummy, and a food budget stretcher!

About the Author
Elaine grew up with four brothers in a Mennonite home on a dairy farm in Pennsylvania, with parents who came from the Amish church. She is grateful for her rich heritage which fostered spiritual health and taught her the life skills of homemaking and cooking for a family. Cooking and baking is one way for her to extend warmth and caring to people, and she hopes to inspire other homemakers to not only cook for their families, but to also resurrect the seemingly-lost art of hospitality. The author is a writer, blogger, and member of the Northern Virginia Christian Writer’s Fellowship, as well as the author of three books for children. The titles of the trilogy are: Biff and Becka’s Springtime Escapades, Biff and Becka’s Stupendous Vacation, and Biff and Becka’s Splendiferous Christmas.
